Easy Pumpkin Bread
Make this even better by buying pie pumpkins in the fall and canning them yourself! One quart of home-canned pumpkin is roughly equivalent to a 15 oz. can of the store-bought stuff.

  1. Preheat oven to 350°F. Lightly grease and flour loaf pans.
  2. Combine pumpkin, eggs, oil, water, vanilla, and sugar in a large bowl.
  3. In a separate bowl, whisk together remaining ingredients.
  4. Add the dry ingredients to the wet. Mix until just combined. Don't overmix.
  5. Pour immediately into prepared pans and bake for approximately 1 hour, until a toothpick inserted near the center comes out clean.
  6. Cool completely before slicing and serving.
